This medley contains black, white, green, and pink peppercorns. Black peppercorns start as unripe green peppercorns and develop their black color once they are allowed to dry in the sun. White peppercorns, in comparison, are matured pepper plant berries that are washed free of their outer coat and then dried. Green peppercorns are unripe and have been soaked in vinegar or brine, whereas pink peppercorns are not technically peppercorns - they come from a rose plant found in Madagascar, off the coast of eastern Africa.
